Let's Get Started

  1. Rinse the split peas under cold water and drain.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
  4. Add the split peas, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 45-60 minutes, or until the split peas are soft and the soup has thickened.
  6. Remove the bay leaf and discard.
  7. Using an immersion blender or a regular blender, puree the soup until smooth.
  8. Taste and adjust the seasoning if needed.
  9. Serve hot and enjoy!
