Split Pea Soup
This hearty split pea soup is made with dried split peas, vegetables, and flavorful herbs.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Vegetable broth - 6 cups
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Carrots - 2 medium, diced
- Onion - 1 medium, chopped
- Dried split peas - 2 cups
Let's Get Started
- Rinse the split peas under cold water and drain.
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
- Add the split peas, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 45-60 minutes, or until the split peas are soft and the soup has thickened.
- Remove the bay leaf and discard.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Taste and adjust the seasoning if needed.
