Let's Get Started

  1. Combine the spinach, ricotta, Parmesan, egg, flour, salt, and pepper in a bowl. Mix until well combined.
  2. Shape the mixture into small balls and place on a baking sheet. Refrigerate for 30 minutes.
  3. Meanwhile, melt the butter in a large pan over medium heat. Add the garlic and cook until fragrant.
  4. Add the tomato sauce and bring to a simmer. Cook for 10 minutes, or until the sauce has thickened.
  5. Cook the gnudi in a large pot of boiling salted water until they float to the surface, about 3-4 minutes.
  6. Drain the gnudi and add them to the sauce. Toss to coat.
  7. Serve the gnudi with the tomato-butter sauce, garnished with the chopped basil.
