Spinach and Ricotta Gnudi with Tomato Butter Sauce
This is a delicious Italian dish featuring soft, pillowy gnudi made from spinach and ricotta, served with a rich tomato-butter sauce.
Ingredients - Serves 4
- Basil - A handful, chopped
- Garlic - 2 cloves, minced
- Tomato sauce - 2 cups
- Butter - 1/2 cup
- Salt and pepper - To taste
- Flour - 1/2 cup
- Egg - 1
- Parmesan cheese - 1/2 cup, grated
- Ricotta cheese - 1 cup
- Spinach - 2 cups, cooked and drained
Let's Get Started
- Combine the spinach, ricotta, Parmesan, egg, flour, salt, and pepper in a bowl. Mix until well combined.
- Shape the mixture into small balls and place on a baking sheet. Refrigerate for 30 minutes.
- Meanwhile, melt the butter in a large pan over medium heat. Add the garlic and cook until fragrant.
- Add the tomato sauce and bring to a simmer. Cook for 10 minutes, or until the sauce has thickened.
- Cook the gnudi in a large pot of boiling salted water until they float to the surface, about 3-4 minutes.
- Drain the gnudi and add them to the sauce. Toss to coat.
- Serve the gnudi with the tomato-butter sauce, garnished with the chopped basil.
