Edamame Bolognese Sauce
A vegetarian twist on the classic Bolognese sauce, using edamame for a protein-packed, flavorful sauce.
Ingredients - Serves 4
- Basil - A handful, chopped
- Salt and pepper - To taste
- Red wine - 1/2 cup
- Crushed tomatoes - 1 can (28 ounces)
- Tomato paste - 2 tablespoons
- Edamame - 2 cups, shelled and cooked
- Celery - 1 stalk, finely chopped
- Carrot - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrot, and celery, and cook until softened, about 5 minutes.
- Add the edamame and cook for another 5 minutes.
- Stir in the tomato paste until well combined.
- Add the crushed tomatoes, red wine, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Stir in the chopped basil and cook for another 2 minutes.
- Serve the sauce over your favorite pasta.
