Spinach and Feta Pilaf with Basmati Rice
This flavorful pilaf combines tender basmati rice with sautéed spinach and tangy feta cheese.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Feta cheese - 1/2 cup, crumbled
- Spinach - 2 cups, chopped
- Basmati rice - 1 cup
Let's Get Started
- Rinse the basmati rice under cold water until the water runs clear. Drain well.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the basmati rice to the skillet and stir to coat it with the onion and garlic mixture.
- Pour in the vegetable broth and lemon juice. Season with salt and pepper to taste.
