Spinach and Feta Pilaf with Basmati Rice

  1. Rinse the basmati rice under cold water until the water runs clear. Drain well.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the basmati rice to the skillet and stir to coat it with the onion and garlic mixture.
  4. Pour in the vegetable broth and lemon juice. Season with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
