Spicy Vegan Szechuan Tofu Stir Fry
A flavorful and spicy stir-fry dish made with tofu and a variety of vegetables, seasoned with Szechuan sauce.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Szechuan sauce - 1/2 cup
- Carrot - 1, sliced
- Green bell pepper - 1, sliced
- Red bell pepper - 1, sliced
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Sesame oil - 2 tablespoons
- Firm tofu - 1 block, drained and cubed
Let's Get Started
- Press the tofu to remove excess water and then cut into cubes.
- Heat the sesame oil in a large pan or wok over medium heat.
- Add the garlic and ginger and cook for 1-2 minutes until fragrant.
- Add the tofu to the pan and cook until it is golden brown on all sides.
- Add the bell peppers and carrot to the pan and stir-fry for 5-7 minutes until the vegetables are tender.
- Pour the Szechuan sauce and soy sauce over the tofu and vegetables and stir to combine.
- Cook for another 2-3 minutes until the sauce has thickened.
- Serve the stir-fry over rice and garnish with the chopped green onions and sesame seeds.
