Spicy Vegan Szechuan Tofu Stir Fry

Ingredients - Serves 4

Let's Get Started

  1. Press the tofu to remove excess water and then cut into cubes.
  2. Heat the sesame oil in a large pan or wok over medium heat.
  3. Add the garlic and ginger and cook for 1-2 minutes until fragrant.
  4. Add the tofu to the pan and cook until it is golden brown on all sides.
  5. Add the bell peppers and carrot to the pan and stir-fry for 5-7 minutes until the vegetables are tender.
  6. Pour the Szechuan sauce and soy sauce over the tofu and vegetables and stir to combine.
  7. Cook for another 2-3 minutes until the sauce has thickened.
  8. Serve the stir-fry over rice and garnish with the chopped green onions and sesame seeds.
