Spicy Tempeh Curry

Ingredients - Serves 4

Let's Get Started

  1. Heat the coconut oil in a large pan over medium heat.
  2. Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the pan and set aside.
  3. In the same pan, add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
  4. Add the curry powder and cayenne pepper and cook for another minute.
  5. Add the coconut milk, vegetable broth, and cooked tempeh. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the curry over rice or with naan bread.
