Spicy Seafood Chowder
This creamy and flavorful seafood chowder is packed with a variety of seafood and a spicy kick.
Ingredients - Serves 6
- Salt and pepper - To taste
- Fresh parsley - 2 tablespoons, chopped
- Heavy cream - 1 cup
- Cayenne pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cajun seasoning - 1 tablespoon
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 1 can (14 oz)
- Fish stock - 4 cups
- Seafood mix (shrimp, scallops, mussels, etc.) - 1 lb
- Red bell pepper - 1, diced
- Potato - 2 medium, peeled and diced
- Carrot - 2 medium, diced
- Celery - 2 stalks, diced
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, celery, carrot, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
- Add the seafood mix and cook for another 3 minutes, until the seafood is partially cooked.
- Add the fish stock, diced tomatoes, tomato paste, Cajun seasoning, paprika, and cayenne pepper. Stir well to combine.
- Bring the chowder to a boil, then reduce the heat and simmer for 20 minutes, until the flavors are well blended.
- Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
- Garnish with fresh parsley before serving.
