Let's Get Started

  1. In a small bowl, whisk together the miso paste, soy sauce, sriracha sauce, minced garlic, and grated ginger.
  2. In a medium pot, bring the vegetable broth to a simmer. Add the tofu slices and cook for 5 minutes.
  3. Remove the tofu from the pot and set aside.
  4. Add the miso mixture to the pot and stir well to combine. Simmer for 5 minutes.
  5. To assemble the wraps, place a lettuce leaf on a clean surface. Top with a spoonful of cooked rice noodles, julienned carrots, cucumber slices, green onions, and a few slices of tofu.
  6. Drizzle some of the miso soup mixture over the fillings.
  7. Fold the sides of the lettuce leaf over the fillings, then roll it up tightly.
  8. Repeat with the remaining lettuce leaves and fillings.
  9. Serve the spicy miso soup wraps as a delicious and healthy appetizer or light meal.
