Spicy Indian Curry Wraps
These spicy Indian curry wraps are filled with flavorful vegetables and wrapped in a warm tortilla.
Ingredients - Serves 4
- Tortillas - 4
- Fresh cilantro - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Salt - To taste
- Cayenne pepper - 1/2 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Potato - 1, diced
- Cauliflower florets - 1 cup
- Carrot - 1, julienned
- Bell pepper - 1, thinly sliced
- Onion - 1, thinly sliced
- Vegetable oil - 2 tablespoons
Let's Get Started
- Heat vegetable oil in a large pan over medium heat.
- Add the onion, bell pepper, carrot, cauliflower, and potato. Cook until the vegetables are tender, about 10 minutes.
- Add the minced garlic, grated ginger, curry powder, turmeric, cumin, cayenne pepper, and salt. Stir well to coat the vegetables in the spices.
