Ingredients - Serves 4
- Salt and pepper - To taste
- Lime - 1, juiced
- Avocado - 1, sliced
- Cooked rice - 2 cups
- Black beans - 1 can, drained and rinsed
- Olive oil - 2 tablespoons
- Chipotle peppers in adobo sauce - 2, minced
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt, pepper, and minced chipotle peppers.
- Heat the olive oil in a grill pan over medium heat. Add the chicken and cook for 6-7 minutes on each side, or until cooked through.
