Spicy Cabbage Soup with Chorizo
A hearty and warming soup packed with spicy chorizo and nutritious cabbage.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cayenne pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Diced tomatoes - 1 can
- Chicken broth - 4 cups
- Cabbage - 1/2 head, shredded
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Chorizo - 200g, diced
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chorizo and cook until browned, about 5 minutes.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the cabbage, chicken broth, diced tomatoes, paprika, cayenne pepper, salt, and pepper. Bring to a boil.
- Reduce the heat and simmer for 20 minutes, or until the cabbage is tender.
- Serve the soup hot, garnished with extra chorizo if desired.
