Chilled Pea Soup
A refreshing and light soup, perfect for summer. The sweetness of the peas is balanced with the tanginess of the yogurt and the hint of mint.
Ingredients - Serves 4
- Salt and pepper - To taste
- Greek yogurt - 1/2 cup
- Mint leaves - 1/4 cup
- Vegetable broth - 4 cups
- Frozen peas - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the peas and vegetable broth. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Remove from the heat and add the mint leaves.
- Blend the soup until smooth using a blender or immersion blender.
- Stir in the Greek yogurt and season with salt and pepper.
- Chill the soup in the refrigerator for at least 2 hours before serving.
