Chilled Pea Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the peas and vegetable broth. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  4. Remove from the heat and add the mint leaves.
  5. Blend the soup until smooth using a blender or immersion blender.
  6. Stir in the Greek yogurt and season with salt and pepper.
  7. Chill the soup in the refrigerator for at least 2 hours before serving.
