South Beach Sopes
A delicious and healthy Mexican dish, South Beach Sopes are small, round, tartlet-like cakes made from masa harina (cornmeal), topped with refried beans, crumbled cheese, lettuce, and salsa.
Ingredients - Serves 4
- Vegetable oil - For frying
- Salsa - 1/2 cup
- Shredded lettuce - 1 cup
- Crumbled queso fresco - 1 cup
- Refried beans - 1 cup
- Water - 1 1/2 cups
- Masa harina - 2 cups
Let's Get Started
- In a large bowl, combine the masa harina and water. Stir until the dough comes together.
- Divide the dough into 8 equal portions. Roll each portion into a ball and flatten into a disc about 1/2 inch thick.
- Heat the oil in a large skillet over medium heat. Add the sopes and cook until golden brown, about 2 minutes per side.
- Spread a layer of refried beans on each sope. Top with crumbled cheese, shredded lettuce, and salsa.
- Serve the sopes warm.
