Sopa de Tortilla
Sopa de Tortilla, also known as Tortilla Soup, is a traditional Mexican soup made with fried tortilla strips, chicken broth, tomatoes, and various toppings.
Ingredients - Serves 4
- Shredded cheese - 1/4 cup
- Sour cream - 1/4 cup
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Avocado - 1, diced
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Chicken broth - 4 cups
- Tomatoes - 2, diced
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Vegetable oil - 1/4 cup
- Corn tortillas - 6
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tortillas into thin strips and spread them on a baking sheet.
- Bake for 10-12 minutes, or until crispy and golden brown.
- In a large pot, heat the vegetable oil over medium heat.
- Add the diced onion and minced garlic. Cook until the onion is translucent.
- Add the diced tomatoes, cumin, chili powder, salt, and pepper. Cook for 5 minutes.
- Pour in the chicken broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
- To serve, ladle the soup into bowls and top with the crispy tortilla strips, diced avocado, lime juice, chopped cilantro, sour cream, and shredded cheese.
