Soondae
Soondae is a traditional Korean dish made with pig's intestines stuffed with a mixture of sweet rice, pork blood, and various seasonings.
Ingredients - Serves 6
- Sesame seeds - 1 tablespoon, toasted
- Dried jujube dates - 4, soaked in water
- Green onions - 2, finely chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ground black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Pork blood - 1/2 cup
- Sweet rice - 1 cup
- Pig's intestines - 1 pound
Let's Get Started
- Clean the pig's intestines thoroughly by rinsing them under cold water and removing any excess fat or debris.
- In a large bowl, combine the sweet rice, pork blood, minced garlic, grated ginger, salt, ground black pepper, soy sauce, sesame oil, and chopped green onions. Mix well.
- Stuff the mixture into the pig's intestines, making sure to tie off the ends securely.
- Bring a large pot of water to a boil. Add the stuffed pig's intestines and the soaked jujube dates. Cook for 2 hours, or until the soondae is fully cooked and firm.
- Remove the cooked soondae from the pot and let it cool slightly. Slice into bite-sized pieces.
- Serve the soondae hot, garnished with toasted sesame seeds.
