Sole Meuniere
Sole Meunière is a classic French dish made with sole fillets, butter, lemon, and parsley.
Ingredients - Serves 2
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Unsalted butter - 4 tablespoons
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- All-purpose flour - 1/4 cup
- Sole fillets - 2 fillets
Let's Get Started
- In a shallow dish, combine the flour, salt, and black pepper.
- Dredge the sole fillets in the flour mixture, shaking off any excess.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat.
- Add the sole fillets to the skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through.
- Remove the sole fillets from the skillet and transfer to a serving plate.
- In the same skillet, melt the remaining 2 tablespoons of butter over medium heat.
- Add the lemon juice to the skillet and cook for 1-2 minutes, or until the butter starts to brown slightly.
- Pour the lemon butter sauce over the sole fillets.
- Garnish with chopped parsley.
- Serve immediately.
