Let's Get Started

  1. In a large bowl, mix together the glutinous rice flour, rice flour, wheat starch, and sugar.
  2. Add the milk and vegetable oil to the flour mixture and stir until well combined.
  3. Strain the mixture into a heatproof dish and steam over high heat for 20 minutes.
  4. Remove the dish from the steamer and let it cool. Once cooled, knead the dough until smooth.
  5. Divide the dough into 10 equal portions. Roll each portion into a ball.
  6. Divide the lotus seed paste and melon seeds into 10 equal portions. Roll each portion into a ball.
  7. Flatten each dough ball and place a lotus seed paste ball in the center. Wrap the dough around the filling and seal the edges.
  8. If desired, add food coloring to the mooncakes.
  9. Place the mooncakes in a mooncake mold and press firmly to shape. Remove the mooncakes from the mold.
  10. Chill the mooncakes in the refrigerator for at least 2 hours before serving.
