Snow Skin Mooncake
Snow Skin Mooncake is a non-baked mooncake known for its soft and sticky snow-like outer layer. It's a popular dessert for the Mid-Autumn Festival.
Ingredients - Serves 10
- Food coloring - Optional
- Melon seeds - 50g
- Lotus seed paste - 350g
- Vegetable oil - 25ml
- Milk - 235ml
- Superfine sugar - 50g
- Wheat starch - 30g
- Rice flour - 60g
- Glutinous rice flour - 100g
Let's Get Started
- In a large bowl, mix together the glutinous rice flour, rice flour, wheat starch, and sugar.
- Add the milk and vegetable oil to the flour mixture and stir until well combined.
- Strain the mixture into a heatproof dish and steam over high heat for 20 minutes.
- Remove the dish from the steamer and let it cool. Once cooled, knead the dough until smooth.
- Divide the dough into 10 equal portions. Roll each portion into a ball.
- Divide the lotus seed paste and melon seeds into 10 equal portions. Roll each portion into a ball.
- Flatten each dough ball and place a lotus seed paste ball in the center. Wrap the dough around the filling and seal the edges.
- If desired, add food coloring to the mooncakes.
- Place the mooncakes in a mooncake mold and press firmly to shape. Remove the mooncakes from the mold.
- Chill the mooncakes in the refrigerator for at least 2 hours before serving.
