  1. In a mixing bowl, combine glutinous rice flour, vegetable oil, and water. Knead until a smooth dough forms.
  2. Divide the dough into small portions and shape them into balls.
  3. Take a dough ball and flatten it with your palm. Place a salted egg yolk and a spoonful of lotus seed paste in the center.
  4. Wrap the dough around the filling, sealing it completely. Roll it into a smooth ball.
  5. Repeat the process for the remaining dough and filling.
  6. Preheat the oven to 350°F (175°C).
  7. Brush the mooncakes with egg wash.
  8. Place the mooncakes on a baking sheet lined with parchment paper.
  9. Sprinkle melon seeds on top of each mooncake.
  10. Bake for 25-30 minutes, or until the mooncakes turn golden brown.
  11. Remove from the oven and let them cool before serving.
