Banh Trung Thu
Banh Trung Thu, also known as Mooncake, is a traditional Vietnamese pastry typically enjoyed during the Mid-Autumn Festival.
Ingredients - Serves 8
- Egg wash - 1 egg, beaten
- Melon seeds - 1/4 cup
- Salted egg yolks - 8
- Lotus seed paste - 1 cup
- Water - 3/4 cup
- Vegetable oil - 1/2 cup
- Glutinous rice flour - 2 cups
Let's Get Started
- In a mixing bowl, combine glutinous rice flour, vegetable oil, and water. Knead until a smooth dough forms.
- Divide the dough into small portions and shape them into balls.
- Take a dough ball and flatten it with your palm. Place a salted egg yolk and a spoonful of lotus seed paste in the center.
- Wrap the dough around the filling, sealing it completely. Roll it into a smooth ball.
- Repeat the process for the remaining dough and filling.
- Preheat the oven to 350°F (175°C).
- Brush the mooncakes with egg wash.
- Place the mooncakes on a baking sheet lined with parchment paper.
- Sprinkle melon seeds on top of each mooncake.
- Bake for 25-30 minutes, or until the mooncakes turn golden brown.
- Remove from the oven and let them cool before serving.
