Smashed Red Potatoes
These smashed red potatoes are crispy on the outside, tender on the inside, and full of flavor. They're the perfect side dish for any meal.

- Parmesan cheese - 1/2 cup, grated
- Salt and pepper - To taste
- Rosemary - 1 tablespoon, chopped
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Red potatoes - 1.5 pounds
Let's Get Started
- Preheat your oven to 450°F (230°C).
- Boil the potatoes in a large pot of salted water until they are tender, about 15-20 minutes.
- Drain the potatoes and let them cool for a few minutes.
- Place the potatoes on a baking sheet. Using a potato masher or the bottom of a glass, gently smash each potato until it is about 1/2 inch thick.
- Drizzle the potatoes with the olive oil. Sprinkle with the minced garlic, chopped rosemary, salt, and pepper.

- Sprinkle the potatoes with the grated Parmesan cheese and bake for another 2-3 minutes, until the cheese is melted and bubbly.
