Let's Get Started

  1. Preheat your oven to 450°F (230°C).
  2. Boil the potatoes in a large pot of salted water until they are tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool for a few minutes.
  4. Place the potatoes on a baking sheet. Using a potato masher or the bottom of a glass, gently smash each potato until it is about 1/2 inch thick.
  5. Drizzle the potatoes with the olive oil. Sprinkle with the minced garlic, chopped rosemary, salt, and pepper.
  6. Bake for 15-20 minutes, or until the potatoes are golden and crispy.
  7. Sprinkle the potatoes with the grated Parmesan cheese and bake for another 2-3 minutes, until the cheese is melted and bubbly.
  8. Serve the potatoes hot, garnished with additional rosemary if desired.
