Skonsur
Skonsur are traditional Icelandic scones made with flour, buttermilk, and butter. They are delicious served warm with butter and jam.
Ingredients - Serves 8
- Egg - 1, beaten
- Buttermilk - 3/4 cup
- Unsalted butter - 1/4 cup, cold and cubed
- Sugar - 2 tablespoons
- Salt - 1/2 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- Add the cold cubed butter to the flour mixture and use your fingers or a pastry cutter to cut it into the flour until the mixture resembles coarse crumbs.
- Make a well in the center of the mixture and pour in the buttermilk. Stir until just combined.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Roll the dough out to a thickness of about 1/2 inch (1.3 cm).
- Use a round cookie cutter or a glass to cut out scones from the dough. Place them onto the prepared baking sheet.
- Brush the tops of the scones with the beaten egg.
- Bake for 12-15 minutes, or until the scones are golden brown and cooked through.
- Remove from the oven and let cool slightly before serving warm with butter and jam.
