Ingredients - Serves 2
- Peanuts - 2 tablespoons, crushed
- Green onions - 2, chopped
- Fresh noodles - 200g
- Chicken broth - 1 cup
- Sugar - 1 teaspoon
- Chinese black vinegar - 2 tablespoons
- Chili oil - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 3 cloves, minced
- Sichuan peppercorns - 1 teaspoon
- Ground pork - 200g
Let's Get Started
- In a large pan, heat some oil over medium heat. Add the ground pork and cook until browned.
- Add the Sichuan peppercorns, minced garlic, and minced ginger to the pan. Stir fry for 1-2 minutes until fragrant.
- In a small bowl, mix together the soy sauce, sesame oil, chili oil, Chinese black vinegar, and sugar. Set aside.
- Add the chicken broth to the pan with the cooked pork. Bring to a simmer and let it cook for 5 minutes.
- Meanwhile, cook the fresh noodles according to package instructions. Drain and set aside.
- Add the prepared sauce to the pan with the pork and broth. Stir well to combine and let it simmer for another 2-3 minutes.
- Divide the cooked noodles into serving bowls. Pour the pork and sauce mixture over the noodles.
- Garnish with chopped green onions and crushed peanuts.
- Serve hot and enjoy!
