Shiltgeen Soup
Shiltgeen soup is a traditional Mongolian soup made with lamb, vegetables, and spices.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Water - 6 cups
- Salt and pepper - To taste
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Cabbage - 1/2 head, shredded
- Potatoes - 2, diced
- Carrots - 2, sliced
- Onion - 1 large, chopped
- Lamb - 1 lb, cut into small pieces
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the lamb pieces and cook until browned on all sides.
- Add the chopped onion, sliced carrots, diced potatoes, shredded cabbage, minced garlic, and grated ginger. Cook for 5 minutes, stirring occasionally.
- Add the cumin, coriander, salt, and pepper. Stir well to coat the ingredients with the spices.
- Pour in the water and bring to a boil. Reduce the heat and simmer for 45 minutes, or until the lamb is tender and the vegetables are cooked through.
- Taste and adjust the seasoning if needed.
- Serve the shiltgeen soup hot, garnished with fresh cilantro.
