Shiitake Mushrooms Stuffed with Tofu
This is a delicious and healthy vegan appetizer. The shiitake mushrooms are stuffed with tofu and seasoned with soy sauce and sesame oil.
Ingredients - Serves 4
- Salt and pepper - To taste
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green onions - 2, finely chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Tofu - 1 cup, crumbled
- Shiitake mushrooms - 16 large
Let's Get Started
- Preheat the oven to 375°F.
- Remove the stems from the shiitake mushrooms and set the caps aside.
- In a bowl, combine the crumbled tofu, soy sauce, sesame oil, green onions, garlic, ginger, salt, and pepper.
- Stuff each mushroom cap with the tofu mixture.
- Place the stuffed mushrooms on a baking sheet.
- Bake for 15 minutes, or until the mushrooms are tender and the stuffing is heated through.
