Shahi Pulao with Basmati Rice

Ingredients - Serves 4

Let's Get Started

  1. Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. Heat ghee in a large pot over medium heat. Add the sliced onions and cook until golden brown.
  3. Add the cashews, raisins, and sliced almonds to the pot. Cook for 2-3 minutes until the nuts are lightly toasted.
  4. Add the green cardamom pods, cinnamon stick, cloves, and bay leaf to the pot. Cook for another minute until fragrant.
  5. Add the drained basmati rice to the pot and sauté for 2-3 minutes, stirring gently to coat the rice with the spices and ghee.
  6. In a small bowl, soak the saffron strands in warm milk for 5 minutes.
  7. Add the saffron milk, salt, and water to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
  9. Serve the Shahi Pulao hot, garnished with additional fried onions, nuts, and dried fruits if desired.
