Sgombro al Forno Con Verdure
This is a traditional Italian dish featuring baked mackerel with vegetables. It's a healthy and flavorful main course that's easy to prepare.
Ingredients - Serves 4
- Fresh herbs - 1 handful (such as parsley and thyme)
- Salt and pepper - To taste
- Mixed vegetables - 2 cups (such as bell peppers, zucchini, and cherry tomatoes)
- Garlic - 2 cloves, minced
- Lemon - 1, sliced
- Olive oil - 2 tablespoons
- Mackerel - 4 whole
Let's Get Started
- Preheat the oven to 200°C (approximately 400°F).
- Clean the mackerel, removing the innards and scales. Rinse well and pat dry.
- Rub the mackerel with olive oil, inside and out. Season with salt and pepper.
- Place the mackerel in a baking dish. Stuff the cavity of each fish with lemon slices and minced garlic.
- Scatter the mixed vegetables around the fish in the baking dish. Drizzle with more olive oil and season with salt and pepper.
- Bake for 20-30 minutes, or until the fish is cooked through and the vegetables are tender.
- Garnish with fresh herbs before serving.
