  2. Clean the mackerel, removing the innards and scales. Rinse well and pat dry.
  3. Rub the mackerel with olive oil, inside and out. Season with salt and pepper.
  4. Place the mackerel in a baking dish. Stuff the cavity of each fish with lemon slices and minced garlic.
  5. Scatter the mixed vegetables around the fish in the baking dish. Drizzle with more olive oil and season with salt and pepper.
  6. Bake for 20-30 minutes, or until the fish is cooked through and the vegetables are tender.
  7. Garnish with fresh herbs before serving.
