Ingredients - Serves 4

Let's Get Started

  1. Season the chicken thighs with salt and pepper.
  2. Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the coriander and cook for another minute.
  5. Return the chicken to the pot and add the beer. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  6. Add the carrots, potatoes, and peas. Cover and simmer for another 20 minutes, or until the vegetables are tender.
  7. Serve the Seco de Pollo with rice or bread.
