Seco de Pollo
Seco de Pollo is a popular chicken stew from Ecuador, simmered in a sauce of coriander, garlic, onions, and beer.
Ingredients - Serves 4
- Peas - 1 cup
- Potatoes - 2, chopped
- Carrots - 2, chopped
- Beer - 1 cup
- Coriander - 2 tablespoons, ground
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Chicken thighs - 4, bone-in and skin-on
Let's Get Started
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the coriander and cook for another minute.
- Return the chicken to the pot and add the beer. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the carrots, potatoes, and peas. Cover and simmer for another 20 minutes, or until the vegetables are tender.
- Serve the Seco de Pollo with rice or bread.
