Seafood Udon
This delicious seafood udon is a hearty and flavorful Japanese noodle dish packed with a variety of seafood.
Ingredients - Serves 2
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Chicken broth - 4 cups
- Fish sauce - 1 tablespoon
- Mirin - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green onions - 2, sliced
- Bok choy - 2 baby bok choy, halved
- Mushrooms - 4 ounces, sliced
- Fish cake - 4 slices
- Squid - 8 ounces, cleaned and sliced
- Scallops - 8 ounces
- Shrimp - 8 ounces, peeled and deveined
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the garlic and ginger and cook for 1 minute until fragrant.
- Add the shrimp, scallops, squid, and fish cake to the pot. Cook for 2-3 minutes until the seafood is cooked through.
- Add the mushrooms, bok choy, and green onions to the pot. Cook for another 2 minutes until the vegetables are slightly tender.
- Pour in the chicken broth, soy sauce, mirin, and fish sauce. Bring to a boil, then reduce the heat and simmer for 5 minutes to allow the flavors to meld.
- Season with salt and pepper to taste.
- Divide the cooked udon noodles into bowls and ladle the seafood and broth over the noodles.
- Garnish with additional green onions, if desired.
- Serve hot and enjoy!
