- Lemon wedges - For serving
- Parsley - For garnish
- Salt and pepper - To taste
- Mussels - 200 grams
- Squid - 200 grams
- Shrimp - 200 grams
- Saffron threads - A pinch
- Fish stock - 4 cups
- Tomatoes - 2, finely chopped
- Red bell pepper - 1, finely chopped
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Fideo pasta - 250 grams
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pan over medium heat.
- Add the fideo pasta and cook until golden brown, stirring frequently.
- Remove the pasta from the pan and set aside.
- In the same pan, add the garlic, onion, and bell pepper. Cook until softened.
- Add the tomatoes and cook until they break down and form a sauce.
- Return the pasta to the pan and add the fish stock and saffron. Bring to a boil.
- Reduce the heat to low and simmer until the pasta is almost cooked.
- Add the shrimp, squid, and mussels. Cook until the seafood is cooked through and the pasta has absorbed most of the liquid.
- Season with salt and pepper to taste.
- Garnish with parsley and serve with lemon wedges.
