Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the fideo pasta and cook until golden brown, stirring frequently.
  3. Remove the pasta from the pan and set aside.
  4. In the same pan, add the garlic, onion, and bell pepper. Cook until softened.
  5. Add the tomatoes and cook until they break down and form a sauce.
  6. Return the pasta to the pan and add the fish stock and saffron. Bring to a boil.
  7. Reduce the heat to low and simmer until the pasta is almost cooked.
  8. Add the shrimp, squid, and mussels. Cook until the seafood is cooked through and the pasta has absorbed most of the liquid.
  9. Season with salt and pepper to taste.
  10. Garnish with parsley and serve with lemon wedges.
