Bhindi Masala

Ingredients - Serves 4
- Fresh coriander - For garnish
- Salt - To taste
- Garam masala - 1/2 teaspoon
- Coriander powder - 2 teaspoons
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Tomatoes - 2 medium, finely chopped
- Ginger - 1 inch piece, grated
- Garlic - 2 cloves, minced
- Onion - 1 large, finely chopped
- Cumin seeds - 1 teaspoon
- Oil - 2 tablespoons
- Okra - 500 grams, washed and dried
Let's Get Started
- Heat oil in a pan and add cumin seeds. Let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic and grated ginger, sauté for another minute.
- Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Cook until the tomatoes are soft.
- Add the okra and mix well. Cover the pan and cook on low heat for about 20 minutes, or until the okra is cooked through.
- Garnish with fresh coriander and serve hot with roti or rice.
