Berber Omelette
A traditional North African dish, the Berber Omelette is a delicious combination of eggs, tomatoes, and spices, cooked in a tagine.
Ingredients - Serves 4
- Fresh coriander - A handful, chopped
- Salt and pepper - To taste
- Eggs - 6
- Cayenne pepper - 1/4 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Tomatoes - 4, chopped
- Green bell pepper - 1, chopped
- Garlic - 2 cloves, minced
- Onions - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a tagine or large pan over medium heat.
- Add the onions, garlic, and bell pepper and cook until softened, about 5 minutes.
- Add the tomatoes, cumin, paprika, and cayenne pepper. Cook for another 5 minutes, until the tomatoes have broken down.
- Crack the eggs into the pan, being careful not to break the yolks. Season with salt and pepper.
- Cover the pan and cook for 10 minutes, or until the eggs are cooked to your liking.
- Sprinkle with fresh coriander before serving.
