Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a tagine or large pan over medium heat.
  2. Add the onions, garlic, and bell pepper and cook until softened, about 5 minutes.
  3. Add the tomatoes, cumin, paprika, and cayenne pepper. Cook for another 5 minutes, until the tomatoes have broken down.
  4. Crack the eggs into the pan, being careful not to break the yolks. Season with salt and pepper.
  5. Cover the pan and cook for 10 minutes, or until the eggs are cooked to your liking.
  6. Sprinkle with fresh coriander before serving.
