Indian Style Tofu Scramble
This Indian style tofu scramble is a healthy and delicious vegan breakfast option, packed with spices and vegetables.
Ingredients - Serves 4
- Fresh coriander - For garnish
- Salt and pepper - To taste
- Green peas - 1/2 cup
- Tomato - 1, chopped
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Tofu - 1 block, firm
Let's Get Started
- Drain and press the tofu to remove excess water.
- Heat the olive oil in a pan over medium heat.
- Add the onion, garlic, and ginger and sauté until the onion is translucent.
- Crumble the tofu into the pan and add the turmeric, cumin, and coriander. Stir well to combine.
- Add the tomato and green peas and cook for a few minutes until the peas are tender.
- Season with salt and pepper to taste.
- Garnish with fresh coriander before serving.
