Schweinshaxe Mit Knodel
Schweinshaxe mit Knödel is a traditional German dish consisting of roasted pork knuckle served with potato dumplings.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Butter - 4 tablespoons
- Parsley - 2 tablespoons, chopped
- Egg - 1
- Bread crumbs - 1 cup
- Potatoes - 6 large, peeled and grated
- Onion powder - 1 teaspoon
- Garlic powder - 1 teaspoon
- Caraway seeds - 1 teaspoon
- Black pepper - 1 teaspoon
- Salt - 2 teaspoons
- Pork knuckles - 4 pieces
Let's Get Started
- Preheat the oven to 350°F (175°C).
- Score the skin of the pork knuckles with a sharp knife.
- In a small bowl, mix together salt, black pepper, caraway seeds, garlic powder, and onion powder.
- Rub the spice mixture all over the pork knuckles, ensuring it gets into the scored skin.
- Place the pork knuckles on a baking tray and roast in the preheated oven for 2.5 to 3 hours, or until the skin is crispy and the meat is tender.
- While the pork is roasting, prepare the potato dumplings (Knödel).
- In a large bowl, combine grated potatoes, bread crumbs, egg, parsley, salt, and pepper. Mix well.
- Form the mixture into 4 large dumplings.
- Bring a large pot of salted water to a boil. Add the dumplings and cook for about 20 minutes, or until they float to the surface.
- Remove the dumplings from the water and let them drain.
- In a large skillet, melt butter with vegetable oil over medium heat.
- Add the drained dumplings to the skillet and cook until golden brown on all sides.
- Serve the roasted pork knuckles with the potato dumplings and enjoy!
