Ingredients - Serves 6
- Dijon mustard - 2 tablespoons
- Dark beer - 1 cup
- Beef broth - 1 cup
- Vegetable oil - 2 tablespoons
- Onion - 1 large, sliced
- Garlic powder - 1 teaspoon
- Caraway seeds - 1 teaspoon
- Black pepper - 1 teaspoon
- Salt - 1 tablespoon
- Pork roast - 3 pounds
Let's Get Started
- Preheat the oven to 325°F.
- Season the pork roast with salt, black pepper, caraway seeds, and garlic powder.
- Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Add the sliced onion and cook until softened and lightly browned.
- Push the onions to the side and add the pork roast to the pot. Sear on all sides until browned.
- Remove the pork roast from the pot and set aside.
- Deglaze the pot with beef broth and dark beer, scraping up any browned bits from the bottom.
- Stir in Dijon mustard.
- Return the pork roast to the pot and cover with the onion mixture.
- Cover the pot with a lid and transfer to the preheated oven.
- Roast for about 3 hours, or until the pork is tender and cooked through.
- Remove the pork roast from the pot and let it rest for a few minutes before slicing.
- Serve the Schweinebraten with the onion mixture and pan juices, along with potatoes and sauerkraut.
