Scampi Linguine
A classic Italian dish, Scampi Linguine combines succulent shrimp with a garlic and white wine sauce, served over a bed of linguine.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Parsley - 1/4 cup, chopped
- Butter - 4 tablespoons
- White wine - 1/2 cup
- Shrimp - 1 pound, peeled and deveined
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Linguine - 1 pound
Let's Get Started
- Cook the linguine according to the package instructions, then drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- Add the white wine to the skillet and bring to a simmer. Cook until the wine has reduced by half, about 5 minutes.
- Add the butter to the skillet and stir until melted. Add the parsley, lemon juice, salt, and pepper, and stir to combine.
- Return the shrimp to the skillet and toss to coat in the sauce.
- Add the cooked linguine to the skillet and toss to combine with the sauce and shrimp.
- Serve the Scampi Linguine hot, garnished with extra parsley if desired.
