Sausage Stuff Acorn Squash

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Brush the inside of the acorn squash halves with olive oil and place them cut side down on a baking sheet.
  3. Bake for 30 minutes, or until the squash is tender.
  4. While the squash is baking, heat the remaining olive oil in a skillet over medium heat.
  5. Add the sausage and cook until browned, then remove from the skillet and set aside.
  6. In the same skillet, add the onion and cook until softened.
  7. Add the garlic and sage and cook for another minute.
  8. Return the sausage to the skillet and season with salt and pepper.
  9. Spoon the sausage mixture into the baked acorn squash halves and top with the grated Parmesan cheese.
  10. Return the stuffed squash to the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
