San Francisco Shrimp Louie Salad
A classic San Francisco salad that's refreshing and very filling at the same time. It's usually served as a whole meal and features crisp lettuce, succulent shrimp, ripe tomatoes, and a tangy dressing.
Ingredients - Serves 4
- Louie dressing - 1 cup
- Cucumber - 1, sliced
- Avocado - 1, sliced
- Hard-boiled eggs - 4, sliced
- Tomatoes - 2, diced
- Romaine lettuce - 1 head, chopped
- Large shrimp - 1 pound, peeled and deveined
Let's Get Started
- Bring a large pot of salted water to a boil. Add the shrimp and cook until they are pink and cooked through, about 3 minutes. Drain and set aside to cool.
- Arrange the lettuce on a large platter or in individual salad bowls.
- Top the lettuce with the cooked shrimp, diced tomatoes, sliced eggs, sliced avocado, and sliced cucumber.
- Drizzle the Louie dressing over the top of the salad.
- Serve immediately, with extra dressing on the side if desired.
