Salted Caramel Gelato

Ingredients - Serves 4
- Egg yolks - 5
- Heavy cream - 1 cup
- Whole milk - 2 cups
- Sea salt - 1/2 teaspoon
- Water - 1/4 cup
- Granulated sugar - 1 cup
Let's Get Started
- In a medium saucepan, combine the sugar and water. Cook over medium heat, stirring occasionally, until the sugar has completely dissolved and the mixture turns a golden caramel color.
- Remove the saucepan from the heat and carefully stir in the sea salt. Set aside to cool slightly.
- In a separate saucepan, combine the milk and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.
- In a large bowl, whisk together the egg yolks. Slowly pour the warm milk mixture into the egg yolks, whisking constantly.
- Pour the egg and milk mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and can coat the back of a spoon.
- Strain the mixture through a fine-mesh sieve into a bowl. Stir in the caramel mixture until well combined.
- Cover the bowl and refrigerate until completely cool, at least 2 hours or overnight.
- Once the mixture is cool, churn it in an ice cream maker according to the manufacturer's instructions. Transfer the gelato to a lidded container and freeze for at least 2 hours before serving.
