Salted Caramel Gelato

Ingredients - Serves 4

Let's Get Started

  1. In a medium saucepan, combine the sugar and water. Cook over medium heat, stirring occasionally, until the sugar has completely dissolved and the mixture turns a golden caramel color.
  2. Remove the saucepan from the heat and carefully stir in the sea salt. Set aside to cool slightly.
  3. In a separate saucepan, combine the milk and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.
  4. In a large bowl, whisk together the egg yolks. Slowly pour the warm milk mixture into the egg yolks, whisking constantly.
  5. Pour the egg and milk mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and can coat the back of a spoon.
  6. Strain the mixture through a fine-mesh sieve into a bowl. Stir in the caramel mixture until well combined.
  7. Cover the bowl and refrigerate until completely cool, at least 2 hours or overnight.
  8. Once the mixture is cool, churn it in an ice cream maker according to the manufacturer's instructions. Transfer the gelato to a lidded container and freeze for at least 2 hours before serving.
