Salt Potatoes
Salt potatoes are a regional specialty of Syracuse, New York, a.k.a. The Salt City. Salt potatoes are bite-size new potatoes boiled in water saturated with salt then served with melted butter.
Ingredients - Serves 4
- Butter - 1/2 cup
- Salt - 1 cup
- Small new potatoes - 1 pound
Let's Get Started
- Rinse the potatoes and place them in a large pot.
- Add enough water to the pot to cover the potatoes.
- Add the salt to the pot and bring the water to a boil.
- Boil the potatoes until they are fork-tender, about 20 minutes.
- While the potatoes are boiling, melt the butter in a small saucepan over low heat.
- Drain the potatoes and let them dry for a few minutes.
- Serve the potatoes with the melted butter for dipping.
