Salt Cod Cakes
These traditional salt cod cakes are a delicious and hearty meal, perfect for dinner or a special occasion.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons, for frying
- Flour - 1/2 cup, for dredging
- Egg - 1, beaten
- Parsley - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Potatoes - 2 large, peeled and cubed
- Salt cod - 1 pound, soaked overnight and drained

- Place the salt cod in a pot and cover with water. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the fish flakes easily with a fork.
- In a separate pot, boil the potatoes until tender. Drain and mash.
- In a large bowl, combine the flaked cod, mashed potatoes, onion, garlic, parsley, and beaten egg. Season with salt and pepper.
- Shape the mixture into patties and dredge in flour.
- Heat the olive oil in a large skillet over medium heat. Fry the cod cakes until golden brown on both sides, about 4 minutes per side.
