Salpicão
Salpicão is a traditional Brazilian salad usually served during the holidays. It's a mix of shredded chicken, vegetables, and a creamy dressing, topped with crispy potato sticks.
Ingredients - Serves 6
- Potato sticks - 1 cup
- Salt and pepper - To taste
- Lime juice - 2 tablespoons
- Mayonnaise - 1 cup
- Peas - 1 cup, canned or fresh
- Corn - 1 cup, canned or fresh
- Raisins - 1/2 cup
- Green apples - 1 cup, diced
- Carrots - 1 cup, grated
- Chicken breast - 2 cups, cooked and shredded

- In a large bowl, combine the shredded chicken, grated carrots, diced apples, raisins, corn, and peas.
- In a separate bowl, mix the mayonnaise and lime juice to make the dressing. Season with salt and pepper.
- Pour the dressing over the salad and mix well to combine.

- Just before serving, top the salad with the crispy potato sticks.
