Salmon with Asparagus and Hollandaise
This is a delicious and healthy dish featuring pan-seared salmon, steamed asparagus, and a creamy hollandaise sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Butter - 1/2 cup, melted
- Egg yolks - 3
- Lemon - 1, juiced
- Asparagus - 1 bunch
- Salmon fillets - 4 (6 ounce)
Let's Get Started
- Season the salmon fillets with salt and pepper, then pan-sear them over medium heat until they are cooked to your liking. Set them aside to rest.
- Steam the asparagus until it is tender, then season it with half of the lemon juice and some salt and pepper.
- To make the hollandaise sauce, whisk the egg yolks and the rest of the lemon juice together in a heatproof bowl until the mixture is thick and creamy.
- Set the bowl over a pot of simmering water, making sure the water does not touch the bottom of the bowl. Gradually pour in the melted butter, whisking constantly until the sauce is thick and creamy.
- Remove the sauce from the heat and season it with salt and pepper.
- Serve the salmon with the asparagus and a generous drizzle of hollandaise sauce.
