Salmon Frittata
This delicious salmon frittata is packed with flavor and makes for a satisfying breakfast or brunch option.
Ingredients - Serves 4
- Parmesan cheese - 1/4 cup, grated
- Olive oil - 1 tablespoon
- Salt and pepper - To taste
- Green onions - 2, sliced
- Spinach - 1 cup, chopped
- Red bell pepper - 1, diced
- Milk - 1/4 cup
- Eggs - 6
- Salmon fillet - 8 ounces, cooked and flaked
Let's Get Started
- Preheat the oven to 375°F.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Heat the olive oil in an oven-safe skillet over medium heat.
- Add the red bell pepper and cook for 2-3 minutes, until slightly softened.
- Add the spinach and green onions to the skillet and cook for another 2 minutes, until the spinach wilts.
- Pour the egg mixture into the skillet and stir in the cooked salmon.
- Cook for 3-4 minutes, until the edges start to set.
- Sprinkle the grated Parmesan cheese over the top of the frittata.
- Transfer the skillet to the preheated oven and bake for 15-18 minutes, until the frittata is set and golden brown on top.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
