Ingredients - Serves 4

Let's Get Started

  1. Cut the cheese into 1/2 inch thick slices.
  2. Dredge the cheese slices in the flour, shaking off any excess.
  3. Heat the olive oil in a non-stick frying pan over medium heat.
  4. Add the cheese slices to the pan and cook until golden brown on both sides, about 2-3 minutes per side.
  5. Remove the pan from the heat and add the brandy. Be careful as the brandy may flame up.
  6. Return the pan to the heat and cook for another minute, until the alcohol has evaporated.
  7. Serve the saganaki hot, with lemon wedges on the side for squeezing over the cheese.
