Saganaki
Saganaki is a traditional Greek appetizer made with a firm cheese, pan-seared to perfection.
Ingredients - Serves 4
- Brandy - 2 tablespoons
- Lemon - 1, cut into wedges
- Olive oil - 2 tablespoons
- All-purpose flour - 1/2 cup
- Kefalotyri or kasseri cheese - 200 grams
Let's Get Started
- Cut the cheese into 1/2 inch thick slices.
- Dredge the cheese slices in the flour, shaking off any excess.
- Heat the olive oil in a non-stick frying pan over medium heat.
- Add the cheese slices to the pan and cook until golden brown on both sides, about 2-3 minutes per side.
- Remove the pan from the heat and add the brandy. Be careful as the brandy may flame up.
- Return the pan to the heat and cook for another minute, until the alcohol has evaporated.
- Serve the saganaki hot, with lemon wedges on the side for squeezing over the cheese.
