S'mores Cheesecake

Ingredients - Serves 8
- Chocolate bar - 1, broken into pieces
- Mini marshmallows - 1 cup
- Semi-sweet chocolate - 4 oz, melted
- Vanilla extract - 1 teaspoon
- Eggs - 3
- Sour cream - 1/2 cup
- Sugar - 1 cup
- Cream cheese - 16 oz (2 blocks), softened
- Butter - 1/3 cup, melted
- Graham crackers - 1 1/2 cups, crushed
Let's Get Started
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine the crushed graham crackers and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add the sour cream, eggs, and vanilla extract, and continue to beat until well combined.
- Pour the melted chocolate into the cream cheese mixture and mix until fully incorporated.
- Pour the cheesecake batter over the graham cracker crust in the springform pan.
- Bake in the preheated oven for 45-50 minutes, or until the center is set and the edges are slightly golden.
- Remove the cheesecake from the oven and let it cool for 10 minutes.
- Sprinkle the mini marshmallows evenly over the top of the cheesecake. Return the cheesecake to the oven and broil for 2-3 minutes, or until the marshmallows are toasted and golden.
- Remove the cheesecake from the oven and let it cool completely.
- Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight, to allow it to set.
- Before serving, garnish the cheesecake with broken pieces of chocolate bar.
