Beignets with Chocolate Sauce

Ingredients - Serves 6
- Heavy cream - 1/2 cup
- Semi-sweet chocolate - 1 cup, chopped
- Powdered sugar - For dusting
- Vegetable oil - For frying
- Bread flour - 4 cups
- Salt - 1 teaspoon
- Evaporated milk - 1/2 cup
- Eggs - 2
- Yeast - 1 packet
- Sugar - 1/4 cup
- Warm water - 1 cup
Let's Get Started
- In a large bowl, combine the warm water, sugar, and yeast. Let sit for 10 minutes until frothy.
- Beat in the eggs, evaporated milk, and salt.
- Gradually add in the bread flour, mixing until a dough forms.
- Cover the bowl with a towel and let the dough rise in a warm place for 2 hours.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Roll out the dough on a floured surface to about 1/4 inch thickness. Cut into squares.
- Fry the beignets in the hot oil until golden brown, then drain on paper towels.
- Dust the beignets with powdered sugar.
- To make the chocolate sauce, heat the heavy cream in a small saucepan until it just begins to simmer.
- Remove from heat and add the chopped chocolate. Let sit for a minute, then stir until smooth.
- Serve the beignets with the chocolate sauce for dipping.
