Let's Get Started

  1. In a large bowl, combine the warm water, sugar, and yeast. Let sit for 10 minutes until frothy.
  2. Beat in the eggs, evaporated milk, and salt.
  3. Gradually add in the bread flour, mixing until a dough forms.
  4. Cover the bowl with a towel and let the dough rise in a warm place for 2 hours.
  5. Heat the vegetable oil in a deep fryer or large pot to 375°F.
  6. Roll out the dough on a floured surface to about 1/4 inch thickness. Cut into squares.
  7. Fry the beignets in the hot oil until golden brown, then drain on paper towels.
  8. Dust the beignets with powdered sugar.
  9. To make the chocolate sauce, heat the heavy cream in a small saucepan until it just begins to simmer.
  10. Remove from heat and add the chopped chocolate. Let sit for a minute, then stir until smooth.
  11. Serve the beignets with the chocolate sauce for dipping.
