Rocky Road Cheesecake

Ingredients - Serves 8
- Chopped nuts (e.g. walnuts or almonds) - 1/2 cup
- Mini marshmallows - 1 cup
- Semi-sweet chocolate chips - 1/2 cup
- Eggs - 3
- Vanilla extract - 1 teaspoon
- Sugar - 1/2 cup
- Cream cheese - 16 oz (2 blocks), softened
- Butter - 1/4 cup, melted
- Chocolate sandwich cookies - 20 cookies, crushed
Let's Get Started
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine the crushed chocolate sandwich cookies and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, beating well after each addition.
- Fold in the chocolate chips, mini marshmallows, and chopped nuts.
- Pour the cheesecake filling over the crust in the springform pan.
