Ingredients - Serves 8

Let's Get Started

  1. In a large bowl, combine the rye flour, all-purpose flour, and salt.
  2. In a separate bowl, dissolve the yeast in the warm water and let sit for 5 minutes.
  3. Add the yeast mixture and quark to the flour mixture and stir until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour, or until doubled in size.
  6. Preheat the oven to 375°F and grease a loaf pan.
  7. Punch down the dough and shape it into a loaf. Place it in the prepared pan and sprinkle the top with caraway seeds.
  8. Bake for about 1 hour, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  9. Let the bread cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
