Roze Koek
Roze Koek is a traditional Dutch treat. It's a simple cake with a distinctive pink fondant topping.
Ingredients - Serves 12
- Pink fondant - 1/2 cup
- Milk - 1/2 cup
- Baking powder - 1 1/2 teaspoons
- All-purpose flour - 1 1/2 cups
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Sugar - 1 cup
- Butter - 1/2 cup, softened
Let's Get Started
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- In a separate bowl, combine the flour and baking powder. Gradually add this to the butter mixture, alternating with the milk. Mix until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Once the cake is cool, roll out the pink fondant and place it over the cake, smoothing it down with your hands.
- Cut the cake into 12 equal pieces and serve.
