Rondon
Rondon is a traditional Caribbean soup made with a mix of seafood, vegetables, and a savory coconut broth.
Ingredients - Serves 6
- Salt and pepper - To taste
- Thyme - 1 tablespoon
- Scotch bonnet pepper - 1, seeded and chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Plantains - 2, peeled and chopped
- Yam - 1 large, peeled and chopped
- Mussels - 1 pound
- Shrimp - 1 pound
- Fish - 2 pounds, any firm white fish
- Coconut milk - 2 cans

- In a large pot, combine the coconut milk, fish, shrimp, mussels, yam, plantains, onion, garlic, Scotch bonnet pepper, thyme, salt, and pepper.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the seafood is cooked through and the vegetables are tender.
- Taste and adjust the seasoning as needed.
- Serve the rondon hot, with extra Scotch bonnet pepper on the side for those who like it spicy.
