Ingredients - Serves 6

  1. Wash the red berries and remove any stems or leaves.
  2. In a saucepan, combine the red berries, sugar, and water. Bring to a boil over medium heat.
  3. Reduce the heat and simmer for 10 minutes, or until the berries are soft and the liquid has thickened slightly.
  4. In a small bowl, mix the cornstarch with a little water to make a slurry. Slowly pour the slurry into the saucepan while stirring continuously.
  5. Continue to cook for another 5 minutes, or until the mixture has thickened to a pudding-like consistency.
  6. Remove from heat and let cool for a few minutes.
  7. In a separate bowl, whip the cream until soft peaks form. Stir in the vanilla extract.
  8. Divide the rodgrod into serving bowls and top with a dollop of whipped cream.
  9. Serve warm or chilled.
